Zucchini and Bacon Mini Loaves

Makes 1 tin | Serves 8 muffins

Ingredients

Muffin Mix
Buckwheat Savoury Muffin Mix

Just Add…
2 eggs 60g, lightly whisked
125ml milk of choice
125g melted butter, OR 92g (100ml) olive oil
1 grated zucchini (slice off 8 thin rounds prior to grating)
1 cup diced bacon (save a little to top each muffin)
100g grated cheese (plus extra for topping)
Smoked paprika (optional)

Optional Extras
Smoked paprika
Butter to serve

Method

1. Preheat the oven to 190°C on bake setting.

2. Spray and line an 8 mini loaf baking tray.

3. Combine dry mix and additional ingredients in a medium bowl.

4. Fold well.

5. Scoop serves evenly across muffin tray.

6. Top with a small amount of bacon, cheese and a round of zucchini.

7. Sprinkle with smoked paprika (optional).

8. Bake for 18-20 mins or until the loaves are starting to brown on top and the centre springs backwhen lightly pressed.

Allow cooling for 5 mins in the tin.
