Apple and Walnut Pancake Tray

Makes 1 pancake tray | Serves 4

Ingredients

Pancake Mix
Buckwheat and Hemp Seed Pancake Mix 

Just add…
2 large eggs, lightly whisked
2 tbsp olive oil
240ml milk of choice

For topping…
2-3 apples, sliced into thin pieces
2⁄3 cup chopped WA walnuts
4 tbsp honey
Hemp seeds (provided in Pancake Mix)

Method

1. Preheat the oven to 180°C on bake setting.

2. Spray and line a baking tray (approx. 26.5cm x 21cm x 2cm). You can use a smaller tray for a thicker cake.

3. Combine Pancake Mix and additional ingredients in a medium bowl.

4. Whisk well and set aside for 5 mins.

5. Pour the batter into the tray and sprinkle with half the hemp seeds.

6. Drizzle half the honey, then top the whole pan with sliced apple and evenly sprinkle over the walnuts and more hemp seeds, finish with the remaining honey.

7. Bake for 10-15 mins or until a knife comes out of the centre cleanly.

Allow to cool for 5 mins before slicing.

Serve using a spatula and enjoy with yoghurt and maple syrup.

Cook's Notes

For the apples to caramelise, finish baking in the oven with the grill on high (be wary of the walnuts burning).
