Buckwheat, Apple and Cinnamon Muffins
Makes 1 tin | Serves 12 muffins
Ingredients
Muffin Mix
Buckwheat Sweet Muffin Mix
Just add…
2 eggs 60g, lightly whisked
125ml milk of choice
125g melted butter, OR 92g (100ml) olive oil
200-250g chopped apple, peeled, cored and finely sliced approximately 2x2cm
Topping
Half a cup of chopped apples from above
2 tbsp cinnamon sugar
Optional Extras
Toasted nuts
Chocolate chips
Method
1. Preheat the oven to 190°C on bake setting.
2. Spray and line a 12 tin muffin tray.
3. Combine dry mix and additional ingredients in a medium bowl.
4. Fold well.
5. Scoop serves evenly across muffin tray.
6. Top the muffins with a couple of pieces of chopped apple and sprinkle evenly with cinnamon sugar.
7. Bake for 18 mins, or until the muffins are starting to brown on top and the centre springs back when lightly pressed.
Allow cooling for 5 mins in the tin.
