Hemp Seed and Herb Crumb Baked Fish

Hemp Seed Crust
20g almond meal
20g pinenuts
Large handful of basil leaves
1 clove of chopped garlic
40g grated parmesan
1 tbsp olive oil
¼ cup Hulled Hemp Seeds (Hemp Hearts) with Fibre
Salt and pepper to taste 

2 servings of Rankin Cod 

2 servings of garden salad
2 wedges of lemon


1. Preheat the oven to 200℃.

2. Lightly blend almond meal, basil, and pine nuts in a food processor.

3: Add garlic, parmesan, a squeeze of lemon, olive oil, hemp seeds, salt and pepper. Blend again until it forms a paste-like consistency. 

4. Layer a thick coating of the paste on each serving of fish and bake for 15 minutes.

5. Serve with a garden salad and a wedge of lemon.
